Red Velvet Cupcakes

Red Velvet , or perhaps devil's food cake ?

"Red velvet is "the Dolly Parton of cakes: a little bit tacky, but you love her"




I am putting up this after quite long , but heyy I promised! Well I just got done with the last exam YES last exam of med. schooool !!! *woot woot* I wont drag the post much , will straight away come to the most gorgeous and perfect Red velvet Cupcake tutorial. I can bet no one i know does it better B-)



Difficulty Level : Moderate

Things you ll need :

  • 1 1/2 cups of sugar
  • 200gms of butter
  • 2 eggs, room temperature
  • 2 1/3 cups of cake flour
  • 2 tbsp cocoa powder 
  • 2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 cup of buttermilk*
  • 1 1/2 tablespoons of red food coloring
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of distilled white vinegar


Cream Cheese Frosting:
  • 200 gms of butter (room temperature)
  • 300 gms cream cheese(3 package)
  • 2 - 3 cups of confectioner's sugar
  • 1 teaspoon of vanilla extract




HOW TO DO ???

1. Preheat the oven to 350°F. Beat the butter and sugar in an electric mixer for 3 minutes on medium speed until light and fluffy.

2. Add the eggs, one at a time, beating until each is fully incorporated. Be sure to scrape down the sides of the bowl to ensure even mixing. 








3. In a large bowl, sift together the cake flour, cocoa powder, baking powder, and salt. 












4. In another bowl whisk together the buttermilk, vinegar, vanilla extract, and red food coloring. 










4. Add a fourth of the dry ingredients and mix, then add a third of the wet. Continue adding in a dry, wet, dry pattern, ending with the dry ingredients. 



Continue beatinggg........


Tip : To make it extra soft and velvety, add 1tsp. baking powder to 1Tbsp. distilled vinegar, it will "fizzz". Add it to the batter instantly, mix and proceed to the next step,you gotta be fast with this.









5. Scoop into cupcake papers, about 3/4 of the way full. Bake for 18-22 minutes or until a toothpick comes out clean. Rotate the pan after the first 15 minutes of baking to ensure even baking. 


I did some hearts too ! =)




6. Allow to cool for five minutes in the pan then transfer to a wire rack to cool completely. Makes about 2 dozen cupcakes.

      


FROSTING: trust me its very simple!







Add the vanilla extract and mix! its ready .....










Pipe onto cooled cupcakes!!









Make 1M  swirls of rich lustrous cream cheese frosting, , mmmmmmmm...................

Heres the simplest No Bake Fudge Recipe ! you will love nibbling it


Easy No-Bake Chocolate Fudge

The best thing about this no-bake quick chocolate fudge is that it takes only few ingredients and is very easy to put together. My sweet tooth family loves them too. Don't forget to add in your favorite combination of toasted nuts and dry fruits. Unexpected guests? You can prepare it in a jiffy. Enjoy! 




Method
1. Pre-heat oven to 350 F. Place chopped nuts on a baking sheet and bake them in oven for 5-8 minutes until toasted and fragrant.

2. Lightly grease and 8 inches square cake tin.

3. Melt chocolate with butter and milk over a pan of simmering water until all ingredients are well combined.

4. Remove from heat and add icing sugar.

5. Mix in the nuts and dry fruits.

6. drop the mixture equally in cupcake liners in a muffin pan and chill until firm.OR
 Press in prepared pan and chill until firm and Cut them in to 1 inch squares.
