Through my phone :)

It's 3 in the morning and I am still up. Needless to say I should have been snoring at this hour , but I never sleep in time. Whyyy?
I don't know :(
But hey the best thing is I just downloaded this App from playstore that let's me blog through my phone. What does it mean ? No more hibernation, Yay.
I am the happiest girl on this earth.

CAUTION ! - Brownies that make you go weak in your knees !

Apologies for staying away for long ! but hey I work a full time job , a little more than that... Yes I over work now.
Never mind , I am a doc :)

I ll cut the post short and put up my best THE BEST brownie tutorial here.
This a tried and tested , wait .... its alot more than that, I have made this atleast 50 times. Th best part is it never goes wrong, What could be cooler than that?
 Original recipe is from BBC foods with alterations made according to the availability of products and my experience .

THINGS YOU NEED

Dark Cooking Chocolate 200gms
Butter                              200gms
Eggs                                2
Sugar                              200gms
Flour                               100gms
Cadbury Cocoa Powder 50gms

White chocolate 50gms
Milk chocolate   50gms



HOW TO DO ?

-Preheat Oven at 160C (electric ovens) or 180C (gas oven)
-Line a 13X9 inch pan with a parchment sheet/ aluminium foil.
-Chop 50g white chocolate and 50g milk chocolate into chunks on a board.




1. Melt Butter and Cooking chocolate in a bowl and heat it in microwave for 2mins and mix to get a smooth runny mix. Let it cool.














2. In a separate bowl blend Sugar with eggs with a beater on the highest speed. This is a very important step. You blend it for 3-8mins (depending on the speed of your mixer) till it looks like a milk shake.






3. In a separate bowl sift flour and cocoa powder well and mix together.




Now comes the real art of making , you have to be patient , wise and very gentle with the mixing part.

Pour the cooled chocolate mixture over the eggy mousse, then gently fold together with a rubber spatula. Plunge the spatula in at one side, take it underneath and bring it up the opposite side and in again at the middle. Continue going under and over in a figure of eight, moving the bowl round after each folding so you can get at it from all sides, until the two mixtures are one and the colour is a mottled dark brown. The idea is to marry them without knocking out the air, so be as gentle and slow as you like .


Now gently fold the cocoa and flour mixture powder using the same figure of eight action as before. The mixture will look dry and dusty at first, and a bit unpromising, but if you keep going very gently and patiently, it will end up looking gungy and fudgy. Stop just before you feel you should, as you don't want to overdo this mixing. Finally, stir in the white and milk chocolate chunks until they're dotted throughout.



Put in the 13X9 inch pan and bake for 15mins .

When the buzzer goes off , open the oven, pull the shelf out a bit and gently shake the tin. If the brownie wobbles in the middle, it's not quite done, so slide it back in and bake for another 5 minutes until the top has a shiny, papery crust and the sides are just beginning to come away from the tin.


Take out , Let it cool down completely.







Cut into squares and store- LOL

These are so addictive ,I bet these will finish within a day ... so prepare yourself to make more :)

Red Velvet Cupcakes

Red Velvet , or perhaps devil's food cake ?

"Red velvet is "the Dolly Parton of cakes: a little bit tacky, but you love her"




I am putting up this after quite long , but heyy I promised! Well I just got done with the last exam YES last exam of med. schooool !!! *woot woot* I wont drag the post much , will straight away come to the most gorgeous and perfect Red velvet Cupcake tutorial. I can bet no one i know does it better B-)



Difficulty Level : Moderate

Things you ll need :

  • 1 1/2 cups of sugar
  • 200gms of butter
  • 2 eggs, room temperature
  • 2 1/3 cups of cake flour
  • 2 tbsp cocoa powder 
  • 2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 cup of buttermilk*
  • 1 1/2 tablespoons of red food coloring
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of distilled white vinegar


Cream Cheese Frosting:
  • 200 gms of butter (room temperature)
  • 300 gms cream cheese(3 package)
  • 2 - 3 cups of confectioner's sugar
  • 1 teaspoon of vanilla extract




HOW TO DO ???

1. Preheat the oven to 350°F. Beat the butter and sugar in an electric mixer for 3 minutes on medium speed until light and fluffy.

2. Add the eggs, one at a time, beating until each is fully incorporated. Be sure to scrape down the sides of the bowl to ensure even mixing. 








3. In a large bowl, sift together the cake flour, cocoa powder, baking powder, and salt. 












4. In another bowl whisk together the buttermilk, vinegar, vanilla extract, and red food coloring. 










4. Add a fourth of the dry ingredients and mix, then add a third of the wet. Continue adding in a dry, wet, dry pattern, ending with the dry ingredients. 



Continue beatinggg........


Tip : To make it extra soft and velvety, add 1tsp. baking powder to 1Tbsp. distilled vinegar, it will "fizzz". Add it to the batter instantly, mix and proceed to the next step,you gotta be fast with this.









5. Scoop into cupcake papers, about 3/4 of the way full. Bake for 18-22 minutes or until a toothpick comes out clean. Rotate the pan after the first 15 minutes of baking to ensure even baking. 


I did some hearts too ! =)




6. Allow to cool for five minutes in the pan then transfer to a wire rack to cool completely. Makes about 2 dozen cupcakes.

      


FROSTING: trust me its very simple!







Add the vanilla extract and mix! its ready .....










Pipe onto cooled cupcakes!!









Make 1M  swirls of rich lustrous cream cheese frosting, , mmmmmmmm...................

Heres the simplest No Bake Fudge Recipe ! you will love nibbling it


Easy No-Bake Chocolate Fudge

The best thing about this no-bake quick chocolate fudge is that it takes only few ingredients and is very easy to put together. My sweet tooth family loves them too. Don't forget to add in your favorite combination of toasted nuts and dry fruits. Unexpected guests? You can prepare it in a jiffy. Enjoy! 




Method
1. Pre-heat oven to 350 F. Place chopped nuts on a baking sheet and bake them in oven for 5-8 minutes until toasted and fragrant.

2. Lightly grease and 8 inches square cake tin.

3. Melt chocolate with butter and milk over a pan of simmering water until all ingredients are well combined.

4. Remove from heat and add icing sugar.

5. Mix in the nuts and dry fruits.

6. drop the mixture equally in cupcake liners in a muffin pan and chill until firm.OR
 Press in prepared pan and chill until firm and Cut them in to 1 inch squares.

Elan-WS

Running a home based business has its benefits but at the same time facebook seems to be the only way of promoting it.
In February 2011 Elan contacted me and invited to join the club. ELAN is a women's social club, gathering women from all over Pakistan and promoting the work they are involved in. It promotes all kinds of businesses run by women and holds meetings almost every month.
After I attended the Elan meeting , the orders of STF started flooding in! Not only the orders increased but I also became aware of other types of businesses that women are running these days.
This gave me a chance to meet so many wonderful lady entrepreneurs and make friends .Also this led to joint ventures and collaborations with other businesses helping me promote my business and expand.
ELAN is a great place to promote your business, meet other working ladies and come across business opportunities.

Who is Sweet Tooth Fairy ?

A 22 year old doctor in process , running at hospital in the day and whipping in the evenings to bring about the yummy, glamorous and pretty little edibles for all the sweet toothers out there!
Baking for family, friends, at charity bake sales, I never thought of taking it professionally until I got a chance to live with someone who would dispatch 15 tiered cakes in front of my eyes! This was tempting and I joined in to learn the art of cake making!
Sweet Tooth Fairy (STF) was launched on August 23rd 2010, as for any sole proprietorship form of business the first few weeks of STF weren't well off.
As time passed, the orders increased and within 5 months STF was a successfully established home bakery.
Theres a large variety  to make your selections from the the STF’s Signature Cake (chocoramel) to possibly all flavors-from peppermint to peanut butter with your choice of buttercream and fondant customization.

The cakes are made on order and hand crafted in hygienic environment and with clean high quality ingredients.
